PORK AND CORNBREAD TACOS

WHAT YOU'LL NEED:

YOUR FAVORITE PULLED PORK RECIPE (2 LBS COOKED)

YOUR FAVORITE BBQ SAUCE (SWEET/SPICY, 1-2 CUPS)

GRIDDLE

SPATULA

COOKIE SCOOP

RECIPE:

CABBAGE SLAW

3/4 CUP GREEN CABBAGE

3/4 CUP RED CABBAGE

1/4 CUP CARROT, MATCHSTICKS

2 TBSP CUP GREEN ONIONS, THINLY SLICED

1/2 CUP CILANTRO AIOLI (RECIPE BELOW)

TOSS ALL INGREDIENTS TOGETHER. BLEND WELL

CILANTRO AIOLI

1/3 CUP MAYO

3 TBSP MILK

1 TBSP CILANTRO, CHOPPED

1 GARLIC CLOVE, GRATED

1/2 TSP SALT

1/2 TSP PEPPER

1/2 TSP CAJUN SEASONING

1/2 TSP SUGAR

1/2 TSP APPLE CIDER VINEGAR

WHISK ALL INGREDIENTS TOGETHER UNTIL SMOOTH AND WELL BLENDED. ADD TO SLAW MIXTURE SHORTLY BEFORE SERVING.

PICKLED ONIONS

BOILING WATER

1 SMALL ONIONS, THINLY SLICED

1/2 CUP VINEGAR

1 TBSP SUGAR

1/2 CUP WATER

1 BAY LEAF

½ TSP SALT

½ TSP PEPPER

POUR BOILING WATER OVER SLICED ONIONS. LET SIT FOR 5 MINS THEN DRAIN. MIX REST OF INGREDIENTS TOGETHER AND POUR OVER BLANCHED ONIONS. COVER AND REFRIGERATE.

CORNMEAL GRIDDLE CAKES

1 CUPS BLUE CORNMEAL

1 CUPS FLOUR

2 CUPS BUTTERMILK

1 EGGS, BEATEN

1 TSP BAKING POWDER

1/2 TSP SALT

1/2 TSP SUGAR

1 TBSP OIL

GENTLY WHISK DRY AND WET INGREDIENTS TOGETHER. COVER AND REFRIGERATE FOR 20 MINS. HEAT GRIDDLE ON MEDIUM HIGH. USING COOKIE SCOOP, LADLE BATTER IN CIRCLES AND SPREAD OUT TO MAKE BIGGER CIRCLES WITH BACK OF COOKIE SCOOP. FLIP GRIDDLECAKES WITH SPATULA ONCE BUBBLES START TO FORM ALL OVER SURFACE (ABOUT 2 MINS), COOK ON OTHER SIDE FOR 2-3 MINUTES.

FRESH CILANTRO OR GREEN ONION (GARNISH), CHOPPED

BUILD TACOS WITH PULLED PORK FIRST, THEN BBQ SAUCE, SLAW, PICKLED ONIONS, AND GARNISH WITH HERBS. ENJOY.
