Maple Apple Glazed Pork Chops

4 Pork Chops

Brine:
4 c Water
1/2 c Frozen Apple Juice Concentrate, thawed
8 Black Peppercorns
1/2 c Brown Sugar
1 c Salt
4 springs Fresh Thyme

1 T Garlic Herb Seasoning (after brining)

Glaze:
1 c Maple Syrup
1 T Dijon Mustard
2 T Butter

Stuffing:
1 T olive oil
1/4 c Onion, chopped
1/4 c Green Bell Pepper, chopped
1/4 c Celery
1/4 c Red Apple, chopped
1 c Bread Crumbs
1/2 c Chicken Broth

Glaze:
1 c Maple Syrup
1 T Dijon Mustard
2 T Butter

3 T Olive Oil for cooking pork chops

Add water, salt, peppercorns, brown sugar, apple juice concentrate and thyme together to make a brine. Place pork chops into the brine for at least 2 hours, then remove and pat dry. Sprinkle with garlic herb seasoning.

In a small sauce pan on medium heat, add maple syrup and Dijon mustard. Mix well and simmer for 5 minutes. Remove from heat and add butter, set aside.

In a separate sauté pan, add onions, peppers, celery, and apples. Sauté for 3 minutes. Add breadcrumbs and cook for an additional 2 minutes. Add chicken broth and cook for 1 minute and set aside.

Cut a small pocket into the pork chops. Stuff the pork chops with the stuffing. Add oil to a cast iron skillet. Cook the chops for 3 minutes. Flip over and cook for 3 more minutes. Baste the chops with the maple glaze.

Place in 400 degree oven for 3 minutes. Pull from the oven and baste with glaze one more time. Let rest for at least 5 minutes before cutting into it.
