Miss Daisy's Chicken Pot Pie
2 c frozen mixed vegetables
3/4 c peeled and diced new potatoes
2 T chopped yellow onion or shallots
1/2 t chicken bouillion base
1/2 t dried thyme
1/2 t dried sage
1 T butter
1/2 t ground black pepper
1/2 t salt (optional )
2 c chopped cooked chicken breast
11/2 cans condensed cream chicken soup
1 10- inch pie shell
1 sheet puff pastry
Assemble ingredients and utensils. In a medium size pot add frozen vegetables, potatoes and onion. Cover with water. Add chicken base, thyme and sage. Bring to a boil and cook for two minutes. Drain liquid and add butter salt and pepper
In a large bowl, mix cooked chicken and cream chicken soup. Add vegetable mixture.
Pour into pie shell. Top with sheet of puff pastry; seal and flute the edges. Cut 4 slots in the top.
Bake.in 375- 400 degree oven for 20-25 minutes or until crust is golden brown.
Yield: 6 servings.
