Easy Weeknight Dinner Recipes

Ann Cox Eastes from Kroger made Southwestern Chicken Fajitas, and Mango and Black Bean Salad. (see recipes below)

SOUTHWESTERN CHICKEN FAJITAS

¼ c canola oil, plus 2-4 T oil
2 T fajita seasoning
1-2 T lime juice
1 lb boneless chicken tenders or boneless chicken breasts
1 pkg fajita style sliced red pepper, green pepper and onion
4-6 (depending on size) corn or flour tortillas, warmed
Condiments – guacamole, salsa, pico de gallo, sour cream (optional)

Combine ¼ cup of oil, fajita seasoning and lime juice in a gallon zip-top bag. Marinate in refrigerator at least 1 hour. Heat 1-2 T oil in a large, heavy skillet over high heat. Add onion and pepper mix; cook, stirring frequently until slightly softened and charred. Remove vegetables to a plate and cover with foil to keep warm or place in a warming drawer. Add remaining 1-2 T oil to skillet and heat. Remove chicken from marinade (discard marinade) and cook chicken, turning at least once. Juices should run clear when tested. Remove chicken to cutting board and cut into strips. If desired, return vegetables to skillet and heat slightly. Place vegetable mixture on serving plate with chicken and serve with warm tortillas and condiments. Yield: 4-6 servings


MANGO AND BLACK BEAN SALAD

1 (15-oz) can black beans, rinsed and drained
2 large mango, diced (about 2 cups)
1 c chopped red pepper
½ c chopped green pepper 1 jalapeno pepper, seeded and diced
1/3-1/2 c chopped sweet onion, red onion or green onions
2-4 T chopped cilantro
2 T lime juice
1 T olive oil
Shredded lettuce (optional)

Combine all ingredients in a large bowl and mix. Serve immediately or refrigerate a couple of hours before serving. If desired serve over shredded lettuce. Yield: 4-6 servings ** Instead of olive oil and lime juice salad could be tossed with a variety of dressings including Southwestern chipotle ranch, cilantro lime, avocado cilantro, etc.

**To save time when preparing meals select from the wide variety of partially prepared and prepped ingredients and cooked poultry and meats in the grocery. Cook extra meat and poultry at home for later use. Cooked chicken can be used in recipes such as oriental chicken stir-fry, oriental chicken bowl, chicken Parmesan, chicken spaghetti, tacos, taco bowl, etc. For additional recipes check out the Kroger web site at www.Kroger.com
