Faux Potato Casserole Made with Cauliflower

Loaded Cauliflower “Fauxtato” Casserole

· 8 oz. Bacon – Cut into half inch pieces

· 3 each Garlic Cloves – Chopped

· 1 each Onion – Chopped

· TT Kosher Salt

· TT Ground Black Pepper

· 1 head Cauliflower – cut into florets

· ½ cup White Wine

· 1 cup Chicken Stock

· ½ cup Heavy Cream

· ½ cup Parmesan Cheese – Grated

· 3 tbsp. Butter – cut into pieces and chilled

· 1 cup Cheddar Cheese – Shredded

· 2 tbsp. Sliced Scallions

Cook bacon and place on paper towel. Leave 2 – 3 tbsp. of bacon fat in pan, add garlic, salt, pepper. Sauté until translucent and add cauliflower. Cook until soft. Add wine and chicken stock; simmer for 30 minutes.

Prepare baking dish by spraying with pan spray.

Mash cauliflower, add cream and parmesan cheese. Place cauliflower mixture into baking dish, top with cheddar cheese. Bake until brown and top with bacon and scallions.
