APPLE STACK CAKE WITH APPLE CIDER CARAMEL SAUCE
Filling Ingredients:
· 5 pounds tart apples, peeled & cut into 1/2“ wedges
· 1 Cup firmly packed light brown sugar
· ½ lemon, sliced
Cake Ingredients:
· Cooking Spray
· 5 (8-inch) round cake pans
· Parchment Paper
· 1 cup butter, softened
· 2 cups sugar
· 5 large eggs, separated
· 1 ½ teaspoons apple pie spice
· 3 cups all-purpose flour, divided
· 1 cup buttermilk
· 1 teaspoon baking soda
· 1 cup, chopped, toasted pecans
· 1 cup apple butter
· Apple Cider Glaze
Apple Cider Caramel Sauce: (You can make this in Advance)
· 2 cup apple cider
· 1 cup brown sugar
· 6 Tablespoons salted butter, cut into small chunks
· Pinch of salt
· ½ cup heavy cream
· 2 Tablespoons light corn syrup
· ½ teaspoon baking soda
· 1 teaspoon vanilla
1ST - Prepare Sauce: In a large heavy bottomed sauce pan, bring the apple cider to a boil. Continue to boil over medium high heat until reduced to about ½ cup. This will take 10-20 minutes. Stir in sugar, butter, salt, cream, corn syrup & baking soda. Bring back to a boil. Mixture will foam up and remain foamy while it’s boiling. Reduce heat a bit so that the mixture continues to boil but doesn’t boil over. Boil for about 7-9 minutes, stirring every so often, until foam begins to subside and sauce is rich caramel color. Remove from heat, stir in vanilla. Use immediately or allow to cool.
2nd - Prepare Filling: Bring all ingredients to a light boil over medium-high heat. Reduce heat to medium-low, and simmer, stirring often, 25 to 30 minutes or until apples are tender. Discard lemon slices. Cool completely (about 2 hours). Cover and chill until ready to use.
3rd - Prepare Cake: Preheat oven to 350°. Lightly grease cake pans with cooking spray.
Beat butter at medium speed until creamy. Gradually add sugar, beating until light and fluffy. Add egg yolks & beat until blended. Add in flour, apple pie spice, baking soda and buttermilk. Beat on low until blended
Fold in pecans & apple butter.
Beat egg whites until stiff peaks form, then fold this into batter.
Divide cake batter among prepared pans. Bake at 350° until toothpick comes out clean. (12-15 min.)
Remove cake layers from oven, and brush each with 2 to 3 Tbsp. Apple Cider Caramel Sauce. (Reserve remaining glaze.) Cool completely (about 30 minutes).
