HARVEST STRATA

Yields: 8 servings

Prep Time: 30 minutes

Cooking Time: 1 hr 10 min

INGREDIENTS

6 cups torn bread

12 eggs

4 cups whole milk

1 tsp minced garlic

2 tsp dry mustard

1 tsp salt

1 tsp ground black pepper

1 tsp dried rosemary

1 tsp ground sage

1 tsp dried thyme

2 tsp ground cinnamon

1 tsp ground nutmeg

1/2 tsp orange zest

1/3 olive oil

1 cup grated parmesan cheese

1 cup shredded cheddar cheese

1 medium red onion, 1 1/2 in. diced

2 medium sweet potatoes, 1 1/2 in. diced

1 butternut squash, 1 1/2 in. diced

3 medium carrots, peeled, diced 1 in.

2 medium parsnips, peeled, diced 1 in.

DIRECTIONS

1)Preheat oven to 350 degrees

2)Grease 9 x 13 pan

3) Place all vegetables on a sheet pan. Drizzle with olive oil and toss.

4) In a large bowl, whisk together eggs, milk, and all seasonings.

5) Add roasted vegetables to the bowl. Fold in the torn bread.

6) Pour half the mixture into the pan. Add the cheese and top with the remaining mixture.

7) Cover the pan with foil and refrigerate for at least 2 - 6 hours.

8) Bake strata for 1 hour and ten minutes or until golden brown and the center is set.

9) Remove from the oven and let rest for 5 minutes before serving.
