Ann Cox Eastes from Kroger made Hash Brown Breakfast Pizza.
BREAKFAST HASHBROWN PIZZA
4 c frozen, shredded hash brown potatoes, thawed and broken apart
4 eggs, divided
1/3 c skim milk or fat free half and half
1 ½ c sautéed onions, green and/or red peppers, mushrooms, cooked chopped ham, pepperoni or crumbled bacon or sausage
2 c shredded cheddar or favorite cheese
In a large bowl mix potatoes with 2 eggs; stir to mix. Spread on a 12-inch pizza pan coated with vegetable spray. Bake crust in a preheated 425F oven for 25-30 minutes or until crust becomes slightly brown and crisp. Combine 6 eggs and milk in a bowl and beat with a wire whisk to combine. Coat a large skillet with vegetable spray or melt 2 tablespoons of butter. Cook scrambled eggs to a moist state. Sprinkle cooked eggs on top of pizza crust. Place sautéed vegetables and/or cooked meats evenly on top of eggs and sprinkle with cheese. Bake in a 425F for another 10-12 minutes or until cheese melts. Yield: 4-6 servings
