KALE & MUSHROOM SOUP
INGREDIENTS
2 full bundles of kale chopped and de-stemmed
16 oz of fire roasted tomatoes
16 oz of chickpeas (washed and drained)
2 teaspoons of minced garlic
10 oz sliced mushrooms
1 yellow onion chopped
32 oz of vegetable broth
1 and 1/2 teaspoons of garlic powder
1 and 1/2 teaspoons of onion powder
1 teaspoon of red pepper flakes
DIRECTIONS
Place mushrooms, onion and garlic in a sauce pan with 1/2 of the vegetable broth. Cook on medium heat for 15 minutes and stir when needed. Add additional ingredients and simmer on medium heat for about 20 minutes. Enjoy!
