Bourbon Brown Sugar Pork Loin

1-1/2 lb pork loin roast (may have to buy 2-3 lb roast & cut in half, reserving one half) 

½ cup water 

GLAZE: 

1 cup brown sugar 

1 tsp minced garlic

½ cup water 

½ cup Jack Daniel TN Whiskey 

3 Tbs cornstarch 

4 Tbs soy sauce 

 Dry meat with paper towels.  Salt & pepper all sides and ends. Heat a large pan with 2 Tbs oil over medium high heat.  Sear each side and ends until golden brown, about 2 minutes per side. Place roast in slow cooker with ½ cup water and cook 5-6 hours on low or until meat thermometer reads 145 degrees. 

Glaze: make while roast is cooking. Whisk all ingredients in small saucepan and heat until boiling. Reduce heat and simmer until glaze thickens.  Baste roast 2-3 times during the last hour of cooking. 

When roast reaches 145 degrees remove from slow cooker and place on a foil lined baking pan. Add another coating of glaze and broil on high for 1-2 minutes to caramelize top.  Remove from oven and tent with foil for 20 minutes before slicing and serving.
