Chef’s Market Cake Bite Truffle
Servings: 24

Ingredients:

  • 4 c. cake scraps (such as the trimmed top from an 8" cake or two cupcakes)
  • 4 Tbsp. buttercream frosting, any flavor you prefer
  • 16 oz. tempered chocolate
  • Optional: assorted decorations like sprinkles, crushed Oreos, fruit powder, or ganache, according to your taste

Directions:

  • Begin by crumbling the cake scraps with your hands into a bowl.
  • Add the buttercream frosting to the crumbs. Using your hands, work the frosting into the crumbs until the mixture is uniform and forms a cohesive, moist, yet non-sticky ball.
  • Using a scoop, form the mixture into tablespoon-sized balls and arrange them on a baking sheet. Freeze these for at least 30 minutes to firm up. This step is crucial to prevent the truffles from disintegrating when dipped in chocolate later.
  • Line a baking sheet with parchment paper This setup will be used for drying the chocolate-coated truffles.
  • Melt the chocolate. Then, using a wooden skewer, dip each chilled ball into the chocolate to coat evenly. Carefully remove the skewer from each truffle. Seal the hole left by the skewer with a bit more chocolate.
  • If you want, while the chocolate is still soft, embellish your truffles with your chosen decorations such as sprinkles or crushed Oreos.
  • Allow the truffles to set, which should take around 15 minutes. Store them at in a refrigerator in a sealed container. They will keep for up to a week.
