Fall - Pork Stir Fry
1lb of pork tenderloin diced into cubes
1 slice of bacon diced small
1/4 red onion in slices (medium)
1 cup sliced brussel sprouts
3 large leaves of Ruby Swiss chard
1 cup broccoli florets
Pork coating
1/2 tsp cinnamon
Salt and pepper
1 tsp cornstarch
Sauce
2 Tbs cranberry sauce
1 tsp whole grain mustard
Combined
Topping
Toasted pecans 2 Tbs
And 2 Tbs dried cranberries
Heat wok nice and hot. Dust meat chunks in the coating set aside. Stir fry bacon into crispy bits. Add the pork and fry till golden and almost cooked. Add in the sauce ingredients. Stir fry. Add the veggies and continue to stir fry.
I serve this on mashed sweet potatoes, so add a scoop and top with the pork stir fry and then decorate with nuts and berries.
