Mexican Street Corn
1 ear corn
1 T mayonnaise
2 T Cotija cheese
Ancho Chili Powder to taste
Steam the corn for 20 minutes until cooked. Brush lightly with mayonnaise until completely covered.
Toss in Cotija, then sprinkle with Ancho Powder. (Serves 1)
