Daisy King made Party Squash, a recipe from her original "Recipes from Miss Daisy's" cookbook. Party Squash (from "Recipes from Miss Daisy's", p. 62)

1 lb yellow squash, sliced 
1 t sugar
1/2 c mayonnaise
1/2 c minced onion 
1/4 c finely chopped green pepper
1/2 c chopped pecans
1 egg, slightly beaten
1/2 c grated Cheddar cheese
Salt and pepper to taste
Bread or cracker crumbs
1/4 cup butter

Preheat the oven to 350 degrees. In a large saucepan cook the squash, drain, and mash. Add the sugar, mayonnaise, onion. green pepper, pecans, egg, Cheddar cheese, salt, and pepper. Put in a 2-quart casserole, top with the crumbs, and dot with butter. Bake for 35 to 40 minutes.

Yield: 6 to 8 servings
