Miss Daisy's Fresh Pear Bread and Honey Cinnamon Butter

Fresh Pear Bread

3 large eggs

1½  c sugar

3/4 c vegetable oil

2 T vanilla extract

3 c all-purpose flour

2 t baking powder

2 t ground cinnamon

1 t baking soda

1 t salt

4 c peeled ripe pears, finely chopped about 4 cups

1 t lemon juice

1 c chopped walnuts or pecans

Assemble ingredients and utensils.In a large bowl, combine eggs, sugar, oil and vanilla. Mix well.

In another bowl, combine flour, baking powder, cinnamon, baking soda and salt. Stir this mixture into the egg mixture and stir until moistened. Toss pears with lemon juice. Toss pears and walnuts into batter. The batter will be thick. Spoon into 2 9x5 inch loaf pans. Bake in a 350 degree oven for 55 to 60 minutes or until a toothpick inserted into the batter comes out clean.Cool about 10 minutes before removing from pan.

 

Honey Cinnamon Butter

1 c butter, softened

½ c honey

1 t or more ground cinnamon

Mix together in a bowl with an electric mixer until thoroughly blended. Chill and serve with Fresh Pear Bread.
