Key Lime Pie
3 egg yolks
1 14- ounce can sweetened condensed milk
1/2 cup key lime juice, I use Nellie and Joe's
1 teaspoon lime zest
1 9-inch graham cracker crust (see recipe below)
Assemble ingredients and utensils. In a mixing bowl, beat the yolks until thick and lemon colored. Fold in milk, juice and lime zest. Pour mixture into baked pie shell.
Bake in a 325 degree oven for 10 minutes until mixture is set. Cool and top with whipped cream. Yield : 6 servings.
Graham Cracker Crust
11/2 cups graham crackers, crushed
1/3 cup sugar
3/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 cup butter, melted
1/2 cup coconut , optional
1/2 cup pecan pieces, optional
In a medium bowl,combine graham cracker crumbs, sugar, cinnamon, nutmeg, butter, and if you desire, coconut and pecans. Mix thoroughly. Pack evenly over bottom and sides of 9-inch pie plate.
Bake in a 350 degree oven for 5 minutes. Chill. Fill with key lime filling. Bake for another 7-8 minutes. Yield:1- 9 inch crust.
Note: coconut and pecans are optional.
