Miss Daisy's Lemon Supreme Cake Recipe

Lemon Cake:

2 Sticks unsalted butter 

Juice of two large lemons

1 3/4 C Sugar

3 C of Cake Flour

1/4 C Lemon Jello (powder)

4 Eggs

1 C Milk (Whole or Low Fat)

3 tsps Baking Powder

1/2 tsp salt

Preheat oven to 350’F. Butter and Lightly Flour 3 8 0r 9 inch layer pans (or spray with Baker’s Joy).   Sift Cake Flour,Jello, Sugar, Salt and Baking Powder into a bowl.

Cream Butter in a large bowl

Add Lemon Juice

Add eggs one at a time, beating well after each addition.

Gradually add dry ingredients until light and fluffy. Alternating with Heavy cream.

Bake for 20 to 25 minutes or until tester inserted into cake comes out clean

Cool in pans for 10 minutes. Remove from pans and finish cooling on racks.

Icing:

4 C of Powdered Sugar

1 C of Unsalted Butter (Softened)

Juice of 2 large Lemons

1-2 tsps of Heaving Whipping (add extra if needed for consistency). May use whole milk also.

Add softened butter and Lemon Juice. Mix until completely combined.

Add Powdered Sugar and beat on low until it is incorporated.

Add Heavy Cream or milk until frosting is the proper consistency.
