Oatmeal on the Go Cups

Coconut oil cooking spray

2½ c old-fashioned rolled oats

½ c Gentle Sweet or stevia sweetener

2 bananas

1 c frozen or fresh blueberries

¾ c egg whites (carton or fresh)

½ c unsweetened almond or cashew milk (or water)

1½ t aluminum-free baking powder

2 pinches Mineral Salt

1 t Natural Burst banana extract (or store brand)

1 t pure vanilla extract

¼ c Integral Collagen (optional)

Preheat the oven to 425°F. Line 12 cups of a muffin tin with cupcake or muffin liners and coat with coconut oil cooking spray. Combine all the ingredients in a large bowl, then divide among the 12 muffin cups and bake for 17 to 18 minutes.
