Summer Veggie Pasta Salad
12 oz Bow Tie Pasta
2 medium Roma tomatoes or 3/4 c chopped cherry tomatoes
1 medium yellow squash,chopped
1 medium zucchini squash,chopped
1 cucumber, chopped
1 c chopped broccoli crowns, optional
1/2 c chopped celery
1/2 c green peas
1/2 medium red onion, chopped
1/2 c roasted red peppers
1/4 c chopped parsley
1/3 c dried dill weed
Assemble ingredients and utensils. Bring a large pot of lightly salted water to boil. Add pasta. Boil 5 minutes. Drain. Mix in vegetables.
Add dressing and serve. Yield: 4-6 servings
Champagne Vinaigrette Dressing
2 t Dijon mustard
1/4 c Champagne vinegar
1 T lemon juice
1 t honey
1/2 t salt
1/4 t white pepper
3/4 c plus olive oil
Combine ingredients and then whisk in olive oil.
Yield: 1 cup.
