Pumpkin Dip and Parfait

Pumpkin Dip & Parfait

Ingredients:

2 cups plain Greek yogurt

1 cup pumpkin puree

2 T pure maple syrup

1 t pumpkin pie spice

1 t vanilla

Freeze dried apple slices

Graham crackers

Pepitas, walnuts, or pecans

Whole grain cinnamon cereal

Directions:

Mix the first five ingredients in a large bowl. This mixture will keep in the refrigerator for up to 3-5 days. For the dip, add some of the pumpkin mixture to a small bowl or coffee mug. Top with pepitas or chopped nuts. Serve with freeze dried apples and graham crackers.

For the parfait (great for breakfast or dessert), layer cereal and pumpkin mixture in a glass, repeating at least twice. Top with pepitas or chopped nuts.

Greek yogurt is full of calcium and protein. And pumpkin is full of beta carotene, helping your skin glow from the inside out. So, this is not only a delicious and easy fall dish, it is very good for you! It would also make a great snack before bed.

Tip: freeze remaining pumpkin puree in ice cube trays. Once frozen, pop out and save in a resealable bag in the freezer. Pumpkin is great to add to breads/muffins, pasta sauces, and even to your dog’s food!
