Cranberry Pecan Coleslaw

1/4 c apple cider vinegar
2 T Dijon mustard
2 T honey
3/4 t salt
1/4 t freshly ground black pepper
1/4 c canola oil
2 10-oz packages shredded coleslaw mix
1 c chopped toasted pecans
3/4 c sweetened dried cranberries
4 green onions, sliced
2 celery ribs, sliced

Assemble ingredients and utensils. In a medium bowl, whisk together the first 5 ingredients. Gradually add oil in a slow steady stream, whisking until well blended. Stir together coleslaw mix and remaining ingredients in a large bowl; add vinegar mixture, tossing to coat. Yield: 8 servings
