CROQUE MADAME
1 slice basic white bread
1 oz unsalted butter
2-3 oz white cheddar cheese
One half small shallot, sliced
5-6 thin slices of Granny Smith apple
2-3 oz of deli ham of choice (suggested: black forest or rosemary roasted; NOTE: do not use Serrano or other highly processed cured meats)
1 egg, cooked sunny side up
Mustard of choice for garnish
Melt butter in 9” nonstick pan over medium to medium low heat; place bread over melted butter. Arrange all cheese on and around the bread. Cook on medium low heat until cheese bubbles & browns slightly on the edges. Place in 350 degree oven for 2-3 minutes. When cheese is cooked, use rubber spatula to lift one corner until cheese releases from pan, and carefully transfer to a cutting board.
Put ham, shallot & apple in same pan, lightly toss until heated. Place atop sandwich. Cut in half diagonally, make a half sandwich. Cut once more to make two triangles. Place on plate with sunny egg on one piece. Garnish with mustard. Eat!
Serves one.
