Five Spice Tomato Chutney

* 2 tbsp. cooking oil

* 1 tbsp. panch puran*^

* 5 fresh curry leaves*

* ½ cup diced red onions

* 2 sliced garlic cloves

* 2 cups diced tomatoes

* 1 cup diced San Marzano tomatoes

* 2 tbsp. tomato paste

* ¼ cup brown sugar

* ¼ cup white vinegar

* salt

* cayenne pepper

*Can be purchased at the Indian specialty stores in the farmers market or at Patel Brothers (on Nolensville Pike in Nashville).

^Panch puran is a whole spice blend consisting of cumin, mustard, fennel, nigella (onion), and fenugreek seeds.

1. Heat oil in a rondeau or a saucepot.

2. Add the whole spices to the hot oil and fry till the spices sputter, next add the curry leaves, onions and garlic and sweat until the onions are translucent. Keep the pot on medium heat.

3. Add the fresh tomatoes and cook until the tomatoes release all the water, next add the San Marzano tomatoes, tomato paste, sugar, vinegar and cayenne pepper and cook covered, stirring often with a rubber spatula until it reaches a jam-like consistency.
