GRAB & GO BREAKFAST SANDWICHES
BLT & AVOCADO BREAKFAST SANDWICH
2 thick slices of hearty bread
1-2 T mayonnaise
2 slices of bacon, cooked crisp and drained
2 slices of tomato
1 hard fried or hard poached egg
2-3 slices avocado
1-2 lettuce leaves
Toast bread in oven or toaster oven. Fry or poach egg while bread is toasting. Spread mayonnaise on toast. Top with bacon, tomato, egg, avocado and lettuce. Yield: 1 serving
HAM, EGG & CHEESE BREAKFAST SANDWICH
1 bun, halved
1-2 T mayonnaise or mustard 1 ¼-inch slice of ham
1 hard fried or hard poached egg
1 slice cheddar, mozzarella or Swiss cheese
Few leaves of baby spinach
Toast bun in toaster or oven. Fry or poach egg while bread is toasting. Warm the ham in a microwave or skillet. Spread the bun with mayonnaise or mustard. Top with ham, egg, cheese and spinach. Yield: 1 serving.
ROASTED ASPARAGUS, PROSCIUTTO & EGG SANDWICH
2 thick slices hearty bread
1-2 T mayonnaise
4-6 spears roasted asparagus, warmed
2 slices prosciutto, warmed
1 hard fried or hard poached egg
1 slice Swiss cheese or ¼ c shredded Parmesan cheese
Toast bread in toaster or oven. Spread with mayonnaise if desired. Top with asparagus, prosciutto, egg and cheese. Yield: 1 serving
