Chimichurri
3 cups white onion (chopped)
12 cloves garlic
1 bunch cilantro
1 bunch flat leaf parsley
4 Tbls salt
2 Tbls paprika
2 Tbls chili powder
1.5 cup olive oil
1 cup red wine vinegar
Potatoes
Cover potatoes in just enough cold water to cover in a stock pot or sauce pan. Season water until it tastes like the ocean. Bring pot to a slow boil until you can insert and move a paring knife into the potatoes with no resistance.
Broccoli Rabe
Cut broccoli into bite sized pieces and toss in salt and oil (grapeseed, canola or any other neutral oil will do). Put a fry pan over high heat until it is hot enough to immediately evaporate a drop of water. Place broccoli in single layer and allow to char completely on one side before turning.
