2 c sugar
1 1/2 c vegetable oil
4 large eggs
1 t vanilla extract
2 1/2 c all-purpose flour
2 t baking powder
1 t ground cinnamon
1 t salt
3 c chopped peeled apples ( I use combination of green and red)
1 c chopped pecans or walnuts
Assemble ingredients and utensils. In a large bowl of mixer, beat sugar and oil at medium speed until combined. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In a medium bowl, whisk together flour and next three ingredients. Gradually add flour mixture to sugar mix, mixing well. Stir in apples and pecans, Pour mixture into a greased pan and bake in a 350 degree oven for 60 minutes or until cake tests done. Let cool in pan and then remove. Finish with the sauce. Yield: 12 servings.
Easy Caramel Sauce:
1 c butter
1 c brown sugar
In a heavy sauce pot, mix ingredients together and bring to a boil. Stir constantly for 3-4 minutes. Remove from heat and let cool for 5-7 minutes. Drizzle over cooled cake.
