A Twisted Spin on Chicken Salad

TWISTED CHICKEN SALAD

INGREDIENTS:

1 rotisserie chicken, chopped
1 can chicken in water, drained
3/4 cup light sour cream
1/2 cup light mayonnaise
1 T Music City Mustard (Chef’s fave – Sweet Heat) or your favorite spicy mustard
1 cup seedless white grapes, chopped
1/2 T fresh lemon juice
3/4 cup celery, chopped (optional)
1 cup dried cranberries
1/2 cup chopped pecans
Salt and pepper to taste

DIRECTIONS:

Mix together first 7 (or 8) ingredients in a large bowl. Add salt and pepper to taste, Chill for 1-2 hours. Right before serving, add cranberries and pecans. Serve in phyllo cups on white or wheat bread or over salad greens.

NOTE: All varieties of Music City Mustard can be enjoyed as a dip, spread or in a favorite recipe.
