Almond Butter & Oats Bars
1 3/4 c (gluten-free) oats
1/4 c (virgin, organic) coconut oil, liquified
1/4 c (organic, raw) honey, softened
1/4 c (gluten-free) oat flour
1 p. (alcohol-free) vanilla extract
1 c (unsalted) almond butter
Directions:
Preheat over the 350 degrees F. Line an 8x8 glass baking dish with (unbleached) parchment paper, set aside.
In a small bowl, mix together the coconut oil, honey and vanilla extract. In a large bowl, mix together the oats and oat flour. Pour the mixture from the small bowl into the large bowl. Add in the almond butter and mix thoroughly. Pour the mixture into the baking dish. Bake for about 20 minutes or until done. Allow it to cool completely. For best results, place it in the refrigerator to harden for a couple of hours before eating. Cut the recipe into small bars and enjoy! Makes 9 to 12 bars
