Irene Long from Irene's Old Fashioned Homemade Cakes made a It's Harvest Time Cake with Maple Buttercream Frosting.  You can find Irene's baked goods at Prince's Hot Chicken, 123 Ewing Lane in North Nashville.  To place an order for one of Irene’s homemade cakes or pies call (615) 999-3791.

IT'S HARVEST TIME CAKE

INGREDIENTS:
4 c all-purpose flour
2 tsp baking soda
2 tsp baking powder
2 Tbsp cinnamon powder
1 tsp pumpkin spice
1/2 tsp allspice
2 1/2 c sugar
4 eggs 
1 2/3 c vegetable oil
2 tsp vanilla extract or flavoring
2 tsp almond extract or flavoring 
1 c grated carrots
1 c chopped apples
16 oz pumpkin filling
1/2 c crushed pineapple
1 c chopped pecans

DIRECTIONS:
In a large bowl mix first seven dry ingredients - then add remaining ingredients
Mix well with a wire beater
In two sprayed 10” baking pans bake at 345 degrees for approximately 35 minutes 
After approximately 5 minutes remove cake from pans. Cool completely.

MAPLE BUTTERCREAM FROSTING

INGREDIENTS:
1 c butter or margarine
1/2 c maple syrup
2 pound bag of powdered white sugar
3 - 4 Tbsp milk

DIRECTIONS:
Whip butter and syrup together
Add sugar and milk
Mix until smooth consistency 

CROCK POT WHITE HOT CHOCOLATE

INGREDIENTS:
3 cups whole milk
1 1/2 cups white chocolate chips
1/2 cup International Delight Coffee Creamer (Pumpkin Spice or Southern Butter Pecan)
Whipped cream and cinnamon to taste

DIRECTIONS:
Heat milk and white chips in crockpot on low for 2-3 hours until chocolate is fully melted and combined with milk.
Add creamer and allow to heat through.
Top with whipped cream and sprinkle with cinnamon.
