BLAZEN BUFFALO CHICKEN BITES

Serves: makes about 36 bites

INGREDIENTS:

2 c cooked chicken, finely chopped
1 pinch salt and pepper to season chicken
2 Tbsp olive oil
1/2 c your favorite buffalo chicken sauce
1 8 oz block of cream cheese, softened to room temp
1 pkg dry ranch dressing mix (3 tbsp)
1/4 c green onions, chopped
1 large celery rib, finely chopped
2 sheets of puff pastry, thawed
a little bit of flour to sprinkle on your counter top
1/2 c shredded parmesan cheese

DIRECTIONS:

Preheat oven to 375 degrees. Next, heat olive oil in a pan on medium heat.

Season chicken with salt and pepper, then place in the pan and cook through (be careful not to overcook, because it will cook more when it goes in the oven).

Take the chicken off the stove and place in a bowl. Pour the buffalo sauce over the chicken, mix and set aside.

Next, in a mixer place the cream cheese, ranch dressing mix, celery and green onions and blend until it's all combined.

Sprinkle some flour on your counter top and unfold the puff pastry sheet. You can use a small roller to flatten the seams, but it isn't necessary.

Next, use a round biscuit or cookie cutter to cut the pastry out in circles.

Place puff pastry circle into each hole of a greased mini muffin tin, then spoon in 1 teaspoon of cream cheese mixture. Add chicken on top and drizzle with extra sauce. Top with shredded parmesan cheese. Bake at 375 for 18-20 minutes.
