BLT Sliders w/ Roasted Pepper-Chive Aioli
1 package of Sister Schubert’s Dinner Yeast Rolls
1 lb bacon
Cook bacon slices and drain on paper towels. Slice tomatoes and tear lettuce to to fit the size of the yeast rolls. Spread aioli (recipe below) on rolls, add bacon, lettuce and tomatoes, and serve.
Roasted Pepper-Chive Aioli
1/3 c mayonnaise
1/4 c drained and chopped roasted red pepper
1 T minced fresh chives
2 t lemon juice
1 t minced garlic
In the bowl of a food processor, pulse all ingredients until well blended. Can be made ahead and will keep for up to a week refrigerated in an airtight container.
