Sweet Heat Chicken and Waffles
Chicken Tenders:
6 raw chicken tenders
1 t garlic powder
1t salt
1 t pepper
2 c all purpose flour
1 T black pepper
1 T Cajun seasoning
Season chicken tenders with salt, pepper, garlic powder. Mix flour, pepper and Cajun seasoning. Dredge chicken tenders in flour mixture. Deep fry chicken tenders in vegetable oil over medium heat (325 degrees) until golden brown. Remove from oil and set aside.
Waffles
Storebought waffle mix
zest of 2 lemons
1 bunch of chives, chopped
Prepare waffle mix according to package directions. Add lemon zest and chives, mix thoroughly. Cook waffles in waffle iron until golden brown
Sweet Heat Syrup
2 cmaple syrup
1 T chili flakes
1/4 c Tiger Sauce
In medium sauce pan, cook all three ingredients over low heat for 5 minutes to infuse flavors
To serve, cut waffle into quarters. Layer with chicken tenders, alternating chicken and waffles. Pour syrup and serve hot. Add extra chives for garnish.
