PITMASTER GEORGE - LOVELESS CAFE

Ingredients for Chicken Brine:
12 cups water
2 cup apple cider vinegar
6 bay leaves
8 garlic cloves (halved)
1/2 cup Loveless dry rub
1 Tablespoon dark brown sugar
Rub:
1 cup Loveless dry rub
2 Tablespoons dark brown sugar
Sauce:
4 cups ketchup
½ cup diced onion
1/3 cup diced green bell pepper
1 Tablespoon minced garlic
1 teaspoon crushed red pepper
½ cup vegetable oil
1 cup honey
1 cup molasses
1 cup Loveless Blackberry Preserves or Any Preferred Brand
1 cup yellow mustard
½ cup Worcestershire sauce
1 ½ cups apple cider vinegar
Directions:
Split chicken in half, removing back bone. Marinate in brine for 1-2 days.
Drain chicken, pat dry. Sprinkle well with rub. Smoke or grill slowly for approximately 3 hours, until internal temp of breast reaches 160*.
For Sauce: Heat oil in pot; add onions, peppers, and red pepper, sauté until onions are transparent. Add garlic and sauté for 3-5 minutes. Add honey, molasses, and Loveless preserves. Caramelize. Add vinegar and stir. Stop cooking. Add ketchup, mustard and Worcestershire. Mix thoroughly.
When chicken is cooked (160* internal temp of breast), coat liberally with sauce. Place on grill or in 350*oven. Be careful not to scorch. Brush with sauce several times while turning chicken, until well sauced. Some lightly charred color is desired.
