George Harvell / Senior Pitmaster, Loveless Cafe
4 cups beans (cooked)
3 strips hickory smoked bacon (thickly slice)
1⁄2 medium onion (finely diced)
1⁄2 medium bell pepper (finely diced)
1 large clove garlic (finely minced)
11⁄2 cups Loveless Cafe Sweet with a Bite BBQ Sauce
1/3 cup yellow mustard
1⁄4 cup molasses
1⁄4 cup dark brown sugar
*The important thing about Loveless Cafe baked beans is not the kind of cooked bean is used, but what is done with the beans after they are cooked. You may cook your own or us a canned product. We recommend black beans or navy beans.
1. Drain the beans in a colander and rinse thoroughly with cold water. Set aside.
2. Dice 2 strips of bacon and render the fat in a medium sauté pan until bacon is almost cooked.
3. Add onions and peppers. Sauté until they begin to soften. Add garlic and continue to cook for 1 minute. Turn off heat.
4. Add Loveless Cafe Sweet with a Bit BBQ Sauce, mustard, molasses and brown sugar to pan and stir together.
5. In a bowl mix beans with the sauce mixture thoroughly.
6. Place in a greased casserole dish.
7. Cut the remaining strip of bacon into thirds and top the beans.
8. Bake in a 350-degree oven for 45 minutes to one hour. Serves 6-8
