RECIPE # 5248 APPLE PINEAPPLE CRISP Monday October 13. 2014

Filling :
2/3 c packed brown sugar
1/3 c granulated sugar
1/2 t ground cinnamon
1/4 t ground nutmeg
2 T all-purpose flour
4 c diced fresh pineapple
4 c peeled,cored,and coarsely sliced flavorful apples
1 T fresh lemon juice
1/2 t grated lemon zest
2 T unsalted butter, melted
Pre-heat oven to 350 degrees f.

Grease a 9 by 13 inch baking dish In a large bowl, stir together the sugars, flour,cinnamon, and nutmeg until blended. Stir in the apples, pineapple, lemon juice, lemon zest, and coarsely melted butter, tossing until the fruit is coated. Spread the filling evenly in the baking dish . Bake for 25 minutes.

Topping :
1/2 c all-purpose flour
1 c old-fashion rolled oats
2/3 c packed brown sugar
1stick unsalted butter

In a medium bowl stir stir together the toppings until blended. Sprinkle the topping evenly over the filling. Press down lightly. Bake at 350 degrees f for 25 to 30 minutes longer, or until the top is nicely browned and the filling is bubbly.
