PUMPKIN SPICE WHOOPIE PIES
2 c packed brown sugar
1 c vegetable oil
1 1/2 c pumpkin puree
2 eggs
  4 cups all-purpose flour
1 t salt
1 t baking powder
1 t baking soda
1 t vanilla extract
1 1/2 T ground cinnamon
1/2T ground ginger
1/2 T ground cloves

Cream Cheese Frosting:
2 (8 ounce) packages cream cheese, softened
1/2 c butter, softened
2 c sifted confectioners’ sugar
1 t vanilla extract

Preheat oven to 350 degrees F. Line baking sheets with parchment paper.In the bowl of an electric mixer fitted with the paddle attachment, combine the oil and brown sugar. Mix in the pumpkin and eggs, beating well. Add the flour, salt, baking powder, baking soda, 1 teaspoon vanilla, cinnamon, ginger and cloves. Mix well.

Using a cookie scoop, drop dough by heaping teaspoons onto the prepared baking sheets two inches apart. Bake at 350 degrees F for 10 to 12 minutes until just set. Let cookies cool then make sandwiches from two cookies filled with cream cheese frosting using a piping bag.

To make cream cheese frosting, in the bowl of an electric mixer fitted with the whisk attachment, cream together the cream cheese and butter. Mix in the vanilla, then gradually stir in the confectioners’ sugar and beat until smooth.
