RAH-RAH RAISINS APPLE CRISP

Ingredients:
5 medium apples (peeled, cored and sliced)
1/8 to 1/4 cup raisins
½ cup sugar
2 Tbsp flour
1 tsp cinnamon
¼ tsp nutmeg
1 Tbsp lemon juice
1 Tbsp butter
Crumb Topping (below)

Crumb Topping:
7 Rah-Rah Raisins cookies (broken into ¼ to ½ inch pieces)
½ cup butter (softened)
½ cup brown sugar
½ cup quick cooking oats
1/3 cup flour
1 tsp cinnamon
½ tsp allspice

For a simple single serving:
2 Rah-Rah Raisins cookies (broken into ¼ to ½ inch pieces)
One apple (peeled, cored and sliced)
1 tsp raisins (optional)
1 Tbsp sugar
1 tsp flour
1 tsp cinnamon
Dash of nutmeg

Directions:
Stir together sugar, flour, cinnamon and nutmeg.
Toss sliced apples in dry mixture, to coat.
Spread apples evenly in greased 2 quart casserole dish.
Sprinkle with lemon juice and raisins and dot with butter.
Sprinkle with crumb topping.
Bake at 350° for 30 minutes and or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with ice cream.

Crumb Topping:
Mix together crumb topping ingredients until crumbly.
Sprinkle over apples.


For a simple, single serving:

Stir together sugar, flour, cinnamon and nutmeg.
Toss sliced apples in dry mixture, to coat.
Place apples in microwave safe dish and sprinkle raisins on top.
Sprinkle cookie pieces on top of apples.
Microwave for 2 minutes on high until tender (adjust time, as needed, for your microwave oven).
For a crisper topping, microwave the apples first and then sprinkle the cookie pieces on top just before serving.
