FUDGE LAYER CAKE

1 (8-oz) pkg semi-sweet baking chocolate squares, divided
1 (16.50- 18.25 oz) pkg chocolate or chocolate fudge cake mix (2 layers)
1 (3.3-oz) pkg chocolate instant pudding and pie filling (4 serving size)
4 eggs
1 cup sour cream
½ cup canola or vegetable oil
½ cup water
1 (8-oz) container frozen whipped topping
Fresh strawberries or raspberries and toasted nuts for garnish

Chop 2 squares of chocolate and set aside. Combine cake mix, pudding mix, eggs, sour cream,oil
and water in a large bowl and beat with an electric mixer 3-4 minutes until all ingredients are combined and batter is smooth. Stir in chopped chocolate. Pour batter into 2 greased and floured 9-inch cake pans. Bake in a preheated 350F oven for 30 minutes or until cake tests done.
Cool cake pans on cooling rack and remove from pan to continue cooling completely.

Chop remaining 6 squares of chocolate and place in bowl with whipped topping to microwave.
Microwave on HIGH for 1 1/2-2minutes, stirring after one minute. Stir until icing is smooth.
Let sit for 10 minutes to thicken slightly. Place one layer of cake on serving plate. Spread with icing. Top with other cake layer and frost top and sides of cake. Store in refrigerator until serving. Yield: 1 9-inch cake (16-18 servings)
