RECIPE #5320 - KC'S BANANA NUT BREAD, Tuesday, March 10, 2015

2 cups flour
1 cup sugar
8 tablespoons 1 stick of unsalted butter, room temperature
2 large eggs
3 ripe bananas (not overripe)
1 tablespoon of milk
1 tsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp vanilla
1/2 cup applesauce
1/2-3/4 cup chopped walnuts

Directions:

Preheat oven 325 F butter a 9x5x3 loaf pan.

Cream sugar and butter in a large mixing bowl until light and fluffy. Add eggs one at a time beating well after each addition.

In a small bowl mash the bananas with a fork. Add milk, cinnamon, applesauce and vanilla.

In another bowl, mix flour, baking soda, baking powder and salt.

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing until flour disappears. Add walnuts.

Pour batter in prepared pan and bake for 1 hour and 10 minutes until a toothpick inserted comes out clean. Set aside to cool on cooling rack. Remove bread from pan.
