Mojo Sauce
3 tbsp. ground cumin
2 1/4 cups olive oil
2 jalapeno peppers minced
15 garlic cloves minced
1 1/2 tsp. salt
1 1/2 tsp. pepper
1 1/4 cup lime juice
3/4 cup cilantro chopped
4 tbsp. rice wine vinegar
4 8 oz. Strips
Preparation:
* Stir cumin in heavy skillet over medium heat until fragrant
* Heat oil in large sauce pan until it reaches 175˚.
* Remove from heat. Mix cumin, jalapeno, garlic,salt,pepper, then fresh lime juice, chopped cilantro and vinegar. Cool completely.
* Cook strips to medium rare.
