French Coconut Pie
3 eggs, slightly beaten
1 1/2 c sugar
1 c coconut
1/2 c melted butter
1 t vanilla extract
1 9-inch pie shell
Assemble ingredients and utensils. In a mixing bowl, add all the ingredients and mix by hand. Bake for 15 minutes in a 400 degree oven. Reduce heat to 350 degrees and continue baking 20 to 25 minutes. Garnish with whipped cream. Yield: 6 servings
