Corn Dogs (and other things!)

3 cups Pancake Mix

1 cups Yellow Corn Meal

1 slightly beaten egg

2 cups water (more or less for desired thickness of coating)

Hot Dogs

Jalapenos (cream cheese or cheddar)

Cheese (string cheese or your favorite)

Skewers or chopsticks

Oil for frying

In a large bowl, combine pancake mix and cornmeal. Stir to combine. Mix together egg and water. Create a well in the center of the pancake mixture and mix until it just comes together. Add more water depending on how you like your coating. The thicker the batter the more it will coat.

Heat oil in a dutch oven over medium-high heat to 350 degrees. While the oil is heating, nsert sticks into hot dogs so that they're 2/3 of the way through. Do the same with the cheese sticks. Slice open the jalapenos on one side big enough to fill with your choice of cheese and then using two skewers, poke through stem end.

Pour batter into a tall pint glass. Dip the hot dogs into the batter and allow excess to drip off for a couple of seconds. Carefully dip the dogs into the oil and give it a slow spin so gravity makes it smooth.

Continue to roll the dog for even browning for about 3-4 mins and once you have a beautiful golden brown look, set on a wire rack or paper towels to drain.

For the jalapenos and cheese, remove from oil the moment they are golden. If they go too far they could leak out melted cheese!
