Recipe:
10 Inch Tortillas
Curried Mashed Potatoes
-2 Boiled Potatoes
-1 Cup Coconut Milk
-1 TBSP Madrass Curry Powder
-1 TBSP Salt
-1 TBSP Sugar
Mash potatoes with all ingredients.
Sweet Potato "Hash" Filling
-1/2 Cup Small Diced Onion
-1/2 Cup Small Diced Sweet Potatoes
-1/2 Cup Shelled Edamame
-1/4 Cup Chopped Cilantro
-1/4 Cup Sliced Green Onion
Saute all ingredients together and finish with cilantro & green onions.
Cilantro Crema
1/2 Bunch Chopped Cilantro
1/2 Cup Lemon Juice
2 Cups Sour Cream
1 TSPN Cumin
2 TSPN Sugar
1 T Salt
Blend all ingredients together with 1 cup of sour cream. Once smooth, fold in another cup of sour cream.
Method:
On half of tortilla spread mashed potato mixture. Add sweet potato hash filling as desired and fold tortilla in half. In a skillet with oil, sear both sides of tortilla until golden brown and crispy. Slice to desired portion and serve with cilantro crema.
