S'mores Brownie Bites
¾ cup whole wheat flour
½ cup all-purpose flour
¼ cup dark cocoa powder
¾ cup sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
¼ cup mini dark chocolate (or bittersweet or semisweet) chips
1 - 6 oz container of nonfat vanilla yogurt
2/3 cup skim or 1% milk
1-2 full sheets graham crackers, crushed into small pieces/crumbs
96 mini marshmallows
Preheat oven to 390 degrees. Fills 48 mini size muffin cups. Combine first seven ingredients in large mixing bowl and whisk well. Mix in chocolate chips. It is important to mix all the dry ingredients well before adding the wet ingredients. Whisk together the milk and yogurt in separate bowl.
Add the milk/yogurt mixture to the dry ingredients and fold in until all ingredients are moist - do not over mix. Spray muffin tin with nonstick spray. Using a tablespoon measure, scoop batter into each muffin cup. Sprinkle each with graham cracker crumbs and top with two mini marshmallows.
Bake for 8-10 minutes. Oven temps vary, so start checking at about 7-8 minutes. Marshmallows should be melted and lightly browned. Allow to cool for a few minutes before removing brownie bites from the pan.
