3 cups peeled and cubed (1/2 inch) English cucumber
3 cups cubed (1/2 inch) seedless watermelon
3 tablespoons fresh lime juice
3/4 t coarse salt
1/8 t ground pepper

DIRECTIONS:

In a large bowl, toss cucumber and watermelon with lime juice. Add salt and pepper. Serve immediately.

If not serving immediately, leave out the salt. Refrigerate salad, covered, up to four hours; just before serving, toss with salt.

MELON WATER:

Put a splash of watermelon juice in a 8 oz glass. Fill with sparkling or tap water and club soda. Add a lime wedge or sprig of mint.
