Slow Cooker Sweet Potato, Chicken and Quinoa Soup
1 ½ lbs boneless chicken breasts or tenders
1 cup quinoa, rinsed
2 large sweet potatoes, peeled & cut into cubes
1 (15oz) can black beans, drained & rinsed
1 cup white corn, drained if using canned
1 (14.5 oz) can petite diced tomatoes
1 medium onion, chopped
2 cloves garlic, minced
2 Tablespoons chili powder
1 tsp cumin
1 tsp salt
6 cups chicken broth
Fresh parsley, chopped-to garnish
Spray the slow cooker with nonstick spray. Cut raw chicken into cubes and put into slow cooker along with the rinsed quinoa. Add to the slow cooker: sweet potato cubes, black beans, undrained tomatoes, onions, garlic, chili powder, cumin, salt and chicken broth. Cook on high for 3-5 hours. Add salt & pepper to taste as needed. Garnish with parsley to serve.
