QUICK BAKE HERB BREAD

Serves 8–12

INGREDIENTS
1 1/2 cups warm water
1 tablespoon honey
1 1/2 teaspoons salt
1 tablespoon dry, active yeast
4 1/2 cups flour
1 tablespoon chopped sage
1 tablespoon chopped rosemary

1. Preheat oven to 400 degrees.
2. Combine water, honey, salt, and yeast in a large, glass bowl. Allow mixture to
sit for up to 10 minutes or until it starts to bubble and a film froth is apparent.
3. Gradually add flour and herbs directly to the yeast mixture, using a rubber
spatula to incorporate flour. Dough should not stick to hands or spatula. If
sticking, simply add a bit more flour. Flour hands and knead dough a few
times; form into a loaf shape. Place the dough on a greased baking sheet and
allow to sit for 20 minutes, covered with a damp cloth.
4. Cut two slits into top of dough; sprinkle with herbs. Bake for 45–50 minutes until crusty and browned.
