Easy At-Home Fried Rice (vegetarian)
4 Cups - Cooked Jasmine Rice (Day Old)
1⁄2 Cup - Julienne Carrots
1⁄4 Cup - Edamame
1⁄2 Cup - Sliced White Onion
1⁄2 Cup - Bean Sprouts
1⁄2 Cup - Sliced Napa Cabbage
1⁄2 Cup - Baby Bok Choy
1⁄4 Cup - Firm Tofu (Diced)
1⁄2 Cup - Hoisin Sauce
1⁄2 Cup - Steamed Green Beans
Optional: 4 Scrambled Eggs (Omit for Vegan)
2 Tbs - Sliced Scallions
4 Tbs - Soy Sauce
4 Tbs - Canola Oil
Salt & Pepper to Taste
INSTRUCTIONS
- Heat up cooking pan, add oil
- Sweat onions until translucent then add rice, cook until oil has coated the rice
- Add the remaining vegetables and cook until warm
- Add hoisin sauce and soy sauce
- Cook until the sauce has been absorbed, finish with salt and pepper
- Garnish with scallions
Note: You can use leftover vegetables for this recipe.
