Tánsuŏ’s Fried Rice

Tánsuŏ Fried Rice:

Ingredients:
4c cooked short grain rice (cold and day old is the best)
2 tbsp vegetable oil
.5 tbsp fine chopped ginger
.25 tbsp fine chopped garlic
.5 c chopped onion
.5 c chopped carrot
3 whole eggs scrambled
.5 cup green peas
1tbsp soy sauce
.5 tsp sugar
1 tsp salt
.5 tsp white pepper

Method: In a well heated wok or large sauce pan add oil. Add ginger and garlic and cook till fragrant, then add the onion and carrot followed by the scrambled egg. Cook until egg is cooked through. Next goes the rice. Constantly stir until heated then add your peas, soy sauce, salt, sugar and white pepper. Incorporate all ingredients and serve.
