Thai Up The Spicy Meatballs

THAI UP THE SPICY MEATBALLS
For the Meatballs:
1/2 c panko breadcrumbs
1 1/2 lbs. ground pork & chicken
1 egg, lightly beaten
3 cloves garlic, minced
2 tbsp green onion, minced
3 tbsp finely grated carrot
2 tbsp soy sauce
1/4 tsp ground ginger
1/4 tsp salt
1/4 tsp black pepper

For the Dipping Sauce:
3/4 cup Thai sweet chili sauce
4 tbls brown sugar
1/4 c soy sauce
4 tbls rice wine vinegar
2 tbls lime juice
1 tbls minced garlic
2 tsps sesame oil

Directions:
Whisk all ingredients together.

Options for Garnish:
Sesame seeds
Sliced green onions

Directions:

  1. Preheat oven on 350 degrees.
  1. Place meatball ingredients in a bowl, mix well with your hands.
  1. With damp hands, roll meat mixture into balls.
  1. Spray rack well with oil and place the meatballs on the rack
  1. Allow meatballs to bake for 30-45 minutes depending on meatball size (temp them out at 165 degrees).
  1. Garnish and serve warm with dipping sauce.
